HEALTHIER OLIVE GARDEN ZUPPA TOSCANA SOUP

Gimme that

I loveee Olive Garden’s Zuppa Toscana soup, but it has heavy cream, potatoes, and other ingredients that I would like to avoid in my meal plan. My version of this soup keeps great flavor, but has a lot more vegetables to help hit your goals.

INGREDIENTS

  • 1 sleeve italian sausage
  • 1 bag cauliflower florets
  • 1 bag cauliflower rice
  • 1 bag kale
  • 1 yellow onion
  • 4 cups chicken broth
  • 1 cup half & half
  • 2 tbsp minced garlic
  • 3 tbsp bacon bits
  • 1 tsp crushed red pepper

INSTRUCTIONS

  • Saute italian sausage and crushed red pepper in your soup pot
  • Saute onion and minced garlic
  • Combine sausage, onion, garlic, chicken broth, half & half, cauliflower, bacon bits, and kale
  • Cook on medium heat for 20 minutes
  • Enjoy!
