I loveee Olive Garden’s Zuppa Toscana soup, but it has heavy cream, potatoes, and other ingredients that I would like to avoid in my meal plan. My version of this soup keeps great flavor, but has a lot more vegetables to help hit your goals.
INGREDIENTS
- 1 sleeve italian sausage
- 1 bag cauliflower florets
- 1 bag cauliflower rice
- 1 bag kale
- 1 yellow onion
- 4 cups chicken broth
- 1 cup half & half
- 2 tbsp minced garlic
- 3 tbsp bacon bits
- 1 tsp crushed red pepper
INSTRUCTIONS
- Saute italian sausage and crushed red pepper in your soup pot
- Saute onion and minced garlic
- Combine sausage, onion, garlic, chicken broth, half & half, cauliflower, bacon bits, and kale
- Cook on medium heat for 20 minutes
- Enjoy!
