I lovee a good soup, and I love the recipes over on Ambitious Kitchen blog. This week for lunch I made the ground turkey chili recipe, with a few changes, and it was delish! Give it a try next time you need something comforting and healthy.
INGREDIENTS
- 1 lb lean ground turkey
- 1 yellow onion
- 1 med bell pepper
- 28oz can crushed tomatoes
- 15 oz can diced tomatoes
- 1 can kidney beans
- 1 can corn
- 1 1/4 cup chicken broth
- 3 garlic cloves
- 4 tbsp chili powder
- 2 tsp cumin
- 1 tsp oregano
- 1 tsp salt
- 1/4 tsp cayenne
INSTRUCTIONS
- Sautee onion and ground turkey in a skillet with oil
- Add diced bell pepper to the skillet and cook for 5 minutes
- Add remaining ingredients and spices
- Cook on low heat for 4 hours
- Top with cheese, avocado, jalapeños, and plain greek yogurt
- Enjoy!
