I lovee a good soup, and I love the recipes over on Ambitious Kitchen blog. This week for lunch I made the ground turkey chili recipe, with a few changes, and it was delish! Give it a try next time you need something comforting and healthy.

INGREDIENTS

  • 1 lb lean ground turkey
  • 1 yellow onion
  • 1 med bell pepper
  • 28oz can crushed tomatoes
  • 15 oz can diced tomatoes
  • 1 can kidney beans
  • 1 can corn
  • 1 1/4 cup chicken broth
  • 3 garlic cloves
  • 4 tbsp chili powder
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • 1/4 tsp cayenne

INSTRUCTIONS

  • Sautee onion and ground turkey in a skillet with oil
  • Add diced bell pepper to the skillet and cook for 5 minutes
  • Add remaining ingredients and spices
  • Cook on low heat for 4 hours
  • Top with cheese, avocado, jalapeños, and plain greek yogurt
  • Enjoy!
