Buffalo Chicken Spaghetti Squash

Take the crave-worthiness from all things buffalo chicken, and make it healthy! This buffalo chicken spaghetti squash is something I will make for dinner over and over again.


  • 1 spaghetti squash
  • 2 cans of chicken
  • 1 bell pepper
  • 1/3 cup of hot sauce
  • 1 cup shredded cheese
  • Green onion
  • Ranch


  • Cut squash in half and scoop out the seeds
  • Spread oil, salt, and pepper on inside of squash
  • Face squash down on plate or baking sheet
  • Microwave for 12 mins or bake at 350 degrees for 30 mins
  • In a bowl, mix drained chicken, diced pepper, hot sauce, and 3/4 cup cheese
  • When squash is cooked, use a fork to scrape noodles
  • Add noodles to bowl, then portion into 4 containers
  • Top with remaining 1/4 cup of shredded cheese
  • Garnish with drizzles of ranch and chopped green onion.
