Nothing says fall and October like some sausage and sauerkraut. I have some pretty big German heritage. I grew up going to Oktoberfest in my hometown every year, and I LOVE all the food. This sausage and sauerkraut soup is a hearty and healthy meal to enjoy and get you in a festive spirit. Let’s make it!

INGREDIENTS
- 2 medium potatoes, cut into 1/4-inch cubes
- 1 pound kielbasa sausage, cut into 1/2-inch rounds
- 24-48 ounces of sauerkraut
- 1 cup cubed chicken, rinsed & drained
- 4 cups chicken broth
- 1 can condensed cream of mushroom soup
- 1 pound sliced mushrooms
- 2 medium sliced carrots
- 2-4 ribs sliced celery
- 2 tbsp white vinegar
- 2 tsp dill weed
- 1/2 tsp pepper
- Optional: bacon bits


INSTRUCTIONS
- Dice potatoes, carrots, celery, and sausage
- Rinse and drain chicken
- Combine all ingredients in pot
- Cover and cook on medium/high heat until the vegetables are tender
- Enjoy!
