Healthy girls still get to eat pasta! One of my favorite parts of my health journey is finding ways to make the meals I crave healthier. For this ground turkey zucchini tomato pasta I am using a low inflammatory meat (ground turkey), a protein penne pasta (Banza), and making sure to add lots of vegetables (zucchini and tomatoes).
If you are not worried about inflammation, you could swap the ground turkey for some italian sausage. It would be a blast of awesome flavor!
INGREDIENTS
- 1 lb meat (ground turkey or italian sausage)
- 1 package protein pasta
- 1 onion
- 1 med zucchini
- 1 cup grape tomatoes
- 4 tbsp minced garlic
- 1 cup chicken broth
- 3 tbsp tomato paste
- Italian seasoning, red pepper flakes, salt & pepper
INSTRUCTIONS
- Chop onions, tomatoes, and zucchini
- Make pasta
- Saute onions and garlic in a skillet
- Add ground turkey and cook until almost brown
- Stir in tomato paste and chicken broth
- Add tomatoes, italian seasoning and red pepper to taste. Cook for 3 minutes
- Add zucchini, salt and pepper, cook for 10 minutes
- Plate pasta into 4 servings and divide sauce
- Enjoy!
