A dreamy creamy soup that is so comforting you won’t believe how healthy it actually is! This is a delicious way to sneak in veggies like carrots and celery.
INGREDIENTS
- 2 cans of chicken
- 4 cups chicken broth
- 1 box wild rice
- 1/2 cup low fat or almond milk
- 3-4 celery stalks
- 1 cup carrots
- 1 sweet onion
- 1 package mushrooms
- 2 tbsp oil, 1 tbsp minced garlic
- 1.5 tsp salt, 1 tsp pepper
- 1/4 cup flour
- 3 bay leaves
- 1 handful of fresh parsley
- Optional: 1 can northern beans
INSTRUCTIONS
- Chop celery, carrots, and onion
- Saute in your soup pot with oil, garlic, and salt until onions are translucent
- Add pepper, mushrooms, chicken, broth, beans, milk, flour, bay leaves, and parsley
- In a separate pot, make your wild rice
- When rice is cooked, add to the main pot
- Cover and cook on medium/low heat until the vegetables are tender
