Get My Free Meal Prep Starter Guide 

Gimme that

A dreamy creamy soup that is so comforting you won’t believe how healthy it actually is! This is a delicious way to sneak in veggies like carrots and celery.

INGREDIENTS

  • 2 cans of chicken
  • 4 cups chicken broth
  • 1 box wild rice
  • 1/2 cup low fat or almond milk
  • 3-4 celery stalks
  • 1 cup carrots
  • 1 sweet onion
  • 1 package mushrooms
  • 2 tbsp oil, 1 tbsp minced garlic
  • 1.5 tsp salt, 1 tsp pepper
  • 1/4 cup flour
  • 3 bay leaves
  • 1 handful of fresh parsley
  • Optional: 1 can northern beans

INSTRUCTIONS

  • Chop celery, carrots, and onion
  • Saute in your soup pot with oil, garlic, and salt until onions are translucent
  • Add pepper, mushrooms, chicken, broth, beans, milk, flour, bay leaves, and parsley
  • In a separate pot, make your wild rice
  • When rice is cooked, add to the main pot
  • Cover and cook on medium/low heat until the vegetables are tender
  • Enjoy!
