Sometimes you need a steamy bowl of chicken noodle soup. We combined comfort and prioritized vegetables. You have to give this a try!
INGREDIENTS
- 10 cups chicken broth
- 1 lb chicken breast
- 5 celery stalks
- 1 cup shredded carrots
- 1 onion
- 8 oz egg noodles
- 4 garlic cloves
- 1 tsp chili powder
- 2 tsp lemon pepper
- Salt & pepper
- Optional: chopped parsley
INSTRUCTIONS
- Poach chicken (see instructions below)
- Chop celery, carrots, and onion
- Saute veggies with oil in a soup pot
- Add broth and bring to a boil
- Add egg noodles and cook 6 minutes
- Add chili powder and lemon pepper
- Add shredded chicken, cook 10 minutes
- Add salt, pepper, and parsley to taste
POACH CHICKEN
- Boil salted water
- Add chicken and cook 12-15 minutes
