Take the crave-worthiness from all things buffalo chicken, and make it healthy! This buffalo chicken spaghetti squash is something I will make for dinner over and over again.
INGREDIENTS
- 1 spaghetti squash
- 2 cans of chicken
- 1 bell pepper
- 1/3 cup of hot sauce
- 1 cup shredded cheese
- Green onion
- Ranch
INSTRUCTIONS
- Cut squash in half and scoop out the seeds
- Spread oil, salt, and pepper on inside of squash
- Face squash down on plate or baking sheet
- Microwave for 12 mins or bake at 350 degrees for 30 mins
- In a bowl, mix drained chicken, diced pepper, hot sauce, and 3/4 cup cheese
- When squash is cooked, use a fork to scrape noodles
- Add noodles to bowl, then portion into 4 containers
- Top with remaining 1/4 cup of shredded cheese
- Garnish with drizzles of ranch and chopped green onion.
