Need a refreshing meal to change things up? Try this chicken pesto spaghetti squash. It’s juicy from the chicken and cherry tomatoes, comforting from the squash noodles and mozzarella, and refreshing from the pesto. This low-carb meal will keep you full for a fraction of the calories.


  • 2 medium spaghetti squash
  • 3 tbsp pesto
  • 2 cans chicken
  • 1 cup mozzerella
  • 1 handful diced cherry tomatoes
  • Olive oil and salt


  • Poke holes in spaghetti squash with a fork and microwave for 3 minutes
  • Remove and cut each squash in half
  • Scrap guts out and cover insides with olive oil and salt
  • Place squash face down on a baking sheet and cook for 350 degrees for 30 mins
  • Take out squash and use a fork to make noodles
  • In a bowl mix squash, chicken, 3 tbsp pesto, and cheese then scoop back into halves
  • Bake for another 12 minutes
  • Remove and top with more cheese, pesto, and tomatoes
  • Enjoy!
