PESTO CHICKEN SPAGHETTI SQUASH

Need a refreshing meal to change things up? Try this chicken pesto spaghetti squash. It’s juicy from the chicken and cherry tomatoes and refreshing from the pesto.

INGREDIENTS

  • 1 spaghetti squash
  • 2 cans chicken
  • 4 tbsp pesto
  • 1 cup mozzerella
  • 1 handful cherry tomatoes
  • Olive oil, salt, and pepper

INSTRUCTIONS

  • Cut squash in half and scoop out the seeds
  • Spread oil, salt, and pepper on inside of squash
  • Face squash down on plate or baking sheet
  • Microwave for 12 mins or bake at 350 degrees for 30 mins
  • When squash is cooked, use a fork to scrape noodles
  • In a bowl mix squash, drained chicken, 4 tbsp pesto, 3/4 cup mozzarella
  • Portion into 4 containers
  • Garnish with 1/4 cup cheese, tomatoes, and pesto
  • Enjoy!
