This vegetable soup with ground turkey is what you need if you are looking for a healthy and easy soup to make this week. I love how easy it is to make, and that buying frozen mixed vegetables saves tons of chopping time. My mom always made her vegetable soup with roast beef, but this ground turkey alternative is less inflammatory and saves a few more calories.
INGREDIENTS
- 1 pound lean ground turkey
- 28 oz tomato sauce
- 3 bags of frozen mixed vegetables
- 1 tsp seasoned salt and basil
- 1/2 tsp salt, pepper, sage, celery salt, onion salt, garlic powder, parsley, and thyme
- 3 chicken bouillon cubes
- 4 cups water
- 1 tbsp olive oil
INSTRUCTIONS
- Add 1 tbsp olive oil to a soup pot and brown your turkey
- Add tomatoe sauce, mixed vegetables, and 4 cups of water
- Add chicken bouillon cubes and spices
- Cover and cook on medium/high heat for 1-2 hrs
