BUFFALO CHICKEN CHOWDER

It’s no secret I’m a soup and “anything spicy” queen. This buffalo chicken chowder combines all-in-one. It is packed with veggies, and the poached chicken falls apart in your mouth. Give it a try for meal prep this week!

INGREDIENTS

  • 3 celery stalks
  • 1 cup carrots
  • 1 cup corn
  • 1/2 onion
  • 8 mini golden potatoes
  • 1/3 cup hot sauce
  • 1 ranch packet
  • 1 cup half & half
  • 4 cups chicken broth
  • 3 tbsp garlic
  • 1.5 lbs chicken breast

INSTRUCTIONS

  • Chop celery, carrots, onion, and potatoes
  • Poach chicken (see instructions below)
  • Add veggies to a big soup pot & sautee with olive oil & garlic
  • Add poached chicken, potatoes, hot sauce, half & half, and ranch packet
  • Keep on medium heat until softened
  • Enjoy!

HOW TO POACH CHICKEN

  • Boil salted water
  • Add chicken breast to water for 12 minutes
  • Remove and cut to check if done
  • Shred and season with salt and pepper
