Get My Free Meal Prep Starter Guide 

Gimme that

I’m pretty sure I could eat Mexican food everyday for the rest of my life. Can you blame me? 🙂 My favorite part is all the different ways to eat it. This time I’m bringing you a super easy and healthy fajita bowl. I’m using canned chicken for the sake of it being quick and convenient, but if you don’t like canned chicken you can prep any chicken to your preference.


  • 2 cans chicken (rinsed and drained)
  • 3 bell peppers
  • 1 onion
  • 1 taco packet
  • 4 cups cauliflower rice
  • Cilantro
  • Lime juice


  • Chop peppers and onions into strips
  • Saute in a skillet until onions are translucent
  • Rinse and drain cans of chicken
  • Add chicken and taco packet to the skillet
  • Cook until chicken is done
  • Heat cauliflower rice in the microwave
  • Lay rice and top with cilantro and lime juice
  • Enjoy!
