INGREDIENTS
- 1 spaghetti squash
- 2 chicken breast
- 1 yellow bell pepper
- Red cabbage
- Edamame
- Shredded carrots
- Peanut sauce
- Optional: cilantro, green onion, and lime juice
INSTRUCTIONS
- Cut squash in half and scoop out the seeds
- Spread oil, salt, and pepper on inside of squash
- Face squash down on plate or baking sheet
- Microwave for 12 mins or bake at 350 degrees for 30 mins
- When squash is cooked, use a fork to scrape noodles
- Portion into 4 containers
- Top with peppers, edamame, cabbage, carrots, & peanut sauce
- Optional: garnish with cilantro, lime juice, and green onion
