Squash is a staple in my meal prep recipes. It’s a great way to incorporate more veggies that taste like carbs!
INGREDIENTS
- 1 spaghetti squash
- 1 lb ground turkey
- 1 taco packet
- 1/2 can black beans
- 1/2 can sweet corns
- 1 avocado
- Toppings: cheese & salsa
INSTRUCTIONS
- Cut squash in half and scoop out the seeds
- Spread oil, salt, and pepper on inside of squash
- Face squash down on plate
- Microwave for 12 minutes
- Brown ground turkey with the taco packet
- When squash is cooked, use a fork to scrape noodles
- Portion into 4 containers
- Top with beans, corn, and cheese
- After reheated, top with salsa and 1/4 avocado
- Enjoy!
