Get My Free Meal Prep Starter Guide 

Gimme that
If I had to eat one soup for the rest of my life it would be chicken tortilla soup. I’m a self proclaimed “soup-a-holic,” and if you were to open my pantry right now, you would likely find these ingredients bunched together ready to dump in my croc pot. Not only is this recipe hearty and delicious…it’s so easy a monkey could make it!


  • 2 cans chicken
  • 1 can black beans
  • 1 big can diced tomatoes
  • 1 small can diced tomatoes
  • 1 can Rotel
  • 1 can corn
  • 1 can green chiles
  • 1 ranch packet
  • 1 taco packet

Optional: top with plain greek yogurt, cheese, avocado, and tortilla chips


  • Drain and rinse chicken and beans
  • Dump all ingredients into pot
  • Cook until soup boils, then simmer
  • Enjoy
