Cravings of warm soups, potatoes and hot ham switch to juicy fruits, refreshing salads, and cold meat sandwiches. It’s my hope that this pear arugula salad finds you well on a summer day or brunch with your closest girlfriends.
You might be wondering, “will this salad keep me full?” Great question! The magic in the salad is the healthy fat from the avocado, almonds, and olive oil. Together they will keep you fuller longer. The arugula is also a wonderful source of vitamin K. The tang of the fruit with the bite from the cheese and lemon make this salad a rave for your tastebuds.
- Baby arugula
- 1/2 pear
- 1/2 or 1/4 avocado
- 1-2 tbsp feta cheese crumbles
- 1 tbsp sliced roasted almonds
- 1 tbsp olive oil
- 1/2 lemon squeezed
- Make a bed of arugula
- Add diced pears and avocado
- Sprinkle cheese crumbles and sliced almonds
- Drizzle olive oil and lemon juice
